Amrit’s Kitcheree

Ingredients:
16 CUPS OF LIQUID (VEG BROTH AND WATER)
1 – 1 ½ CUPS OF MUNG BEANS
1 CUP (OR MORE) OF BASMATI RICE
1 ONION, CHOPPED
5-7 CLOVES OF GARLIC (OR A LITTLE MORE TO TASTE)
1 tsp CHOPPED GINGER ROOT (OR MORE TO TASTE)
½ tsp TURMERIC (OR MORE TO TASTE)
½ tsp BLACK PEPPER
½ TSP CRUSHED RED CHILI FLAKES (CAN LEAVE OUT)
½ tsp CUMIN
2 CUPS (OR MORE TO TASTE) BUTTERNUT SQUASH, CUBED
2 CUPS (OR MORE TO TASTE) KALE OR OTHER LEAFY GREENS,
CHOPPED.
Directions:
Bring water to boil with just Mung Beans for 10 minutes then
add remaining ingredients, except for vegetables and boil gently
for 20 minutes. Add vegetables and continue another 20 minutes
or until soft and soupy (if in hurry can add everything at once).
Toward the end, can add Tamari to taste.
Delicious served with a little cottage cheese or yogurt…
